I didn't have any lemons to make lemonade, but I did have a bunch of fresh vegetables from the garden. I wanted something to go with the family dinner, so I put together this simple summer garden salad — the tomatoes, cucumbers, onions, and basil all came straight from my garden. Looking back, I'm glad I never ripped out that volunteer cucumber plant. It's rewarded me tenfold with more cucumbers than I ever expected.
Ingredients
- Red tomatoes
- Cucumbers
- Onions
- Mozzarella cheese
- Italian dressing
- Basil
Tip on the cucumbers
The day before you make the salad, peel and slice the cucumbers. Layer them in a bowl with a light dusting of salt between layers. The salt draws out some of the water — drain and squeeze out the moisture before adding them to the salad.
